Walleye Saute
1 lb. walleye fillets
2 tbsp. vegetable oil
1 cup onion, sliced
1 cup carrots, julienned
1 large green pepper, julienned
2 large tomatoes, peeled and cut into wedges
1/2 tsp. sweet basil
Salt and pepper to taste
Easy Steps...
- Cut fillets into bite-size pieces
- Heat oil in large skillet over medium heat. Add onions, carrots, and pepper; saute for 10 minutes. Add walleye and remaining ingredients, stirring well.
- Cover and reduce heat; simmer 10 minutes or until fish flakes easily and is no longer translucent in the center. Serves 6.

Selection and Storage:
Walley's market size is between 1 and 3 pounds. It is available fresh or frozen, and may be dressed or cut into fillets or steaks. Plan to purchase 1/2 pound dressed walleye or 1/3 pound fillets or steaks per serving.
Preparation:
Walleye is very meaty and fine-flaked. Walleye is preferred poached or baked. It may also be broiled, pan-fried, or deep-fried with fine results.
