Marinated Salmon with Salsa


1 1/2 lbs. salmon filet, cut into 4 pieces
1/4 cup lemon juice
1/2 cup beer
1 tbsp. fresh cilantro
2 cloves garlic, minced
2 tbsp. onion, minced
1/2 red, green, yellow bell peppers, minced
2 tbsp. salsa
2 tbsp. fresh cilantro
1 tsp. hot sauce


Easy Steps...
  • Combine lemon juice, beer cilantro, garlic, hot sauce, and onion. Mix well.
  • Place salmon in a shallow glass dish; pour marinade over salmon. Turn fillets several times to coat all sides fully. cover and refrigerate up to 1 hour.
  • Preheat barbeque or broiler. Remove salmon from marinade, discard marinade. Broil or grill until fish flakes in center. (About 10 min. per 1" thickness).
  • Mix minced peppers, salsa, cilantro and hot sauce together. Season with salt and pepper. Serve salmon with salsa mixture. Serves 4.

Selection and Storage:
Salmon is sold fresh, frozen, whole and smoked and may be cut as steaks, fillets, and roasts. Salmon flesh is moderately firm and boasts a full and rich flavor. Store, tightly wrapped, for no more than 1 day in the coldest part of the refrigerator.
