Sizzlin’ Catfish


2 tablespoons vegetable oil
4 catfish fillets (about 1 lb.)
1/8 teaspoon salt
¼ teaspoon black pepper
1 tablespoon Lemon Juice
¼ lb. fresh mushrooms, sliced
1 onion, sliced
¼ cup chopped fresh parley

In a large skillet, heat the oil over medium heat.  Season the catfish fillets with the salt and black pepper.  Add to the skillet and sprinkle with the lemon juice. Add the remaining ingredients to the skillet.  Cook for 3 to 4 minutes per side, or until the fish flakes easily with a fork.  Serve the fish topped with the mushroom, onion and parsley mixture.
