2 lb. salmon fillet (enough to fit in a 9x13 glass cooking dish)
1/3 cup olive oil
2 tablespoons soy sauce
2 tablespoons minced garlic
Place salmon in shallow 9 x 13-inch glass cooking dish. Blend olive oil, soy sauce and minced garlic together. Pour sauce mixture over salmon. Sprinkle with salt. Bake at 425 for 20-25 minutes.
This recipe is great to use when you have salmon you would like to prepare ahead of time and freeze. Take the cooked portions and cut into serving size pieces. Place in freezer plastic bags. Put in freezer and remove a portion to thaw whenever desired. Place the thawed salmon in the microwave for 1-3 minutes (depending on portion size). Great way to have salmon for a Caesar salad.
