Monkfish Kebabs


1 lb. monkfish
1 onion
1 green pepper
Mushrooms, small package
1 tsp. cumin, ground
juice of 1 lemon
4 kebab skewers
Oil


Easy Steps...
  • Dice the monkfish, onion and green pepper into 1 1/2" squares.
  • Combine with mushrooms and put on skewers.
  • Sprinkle with cumin and lemon juice; brush with oil. Grill for 5 minutes, turning once. Serves 4.

Selection and Storage:
Only the tail section of a monkfish is utilized. One pound of monkfish fillets will provide three servings.

Because of its very firm, white flesh and sweet flavor, monkfish is touted as the "poor man's lobster." It is especially suitable for grilling, broiling, baking, poaching, and sauteing. It may be used very successfully in recipes calling for scallops, lobster or veal.
