Thai Pasta Crab Salad
12 ozs. fusilli, cooked
1/2 lb. crab, shredded
20 fresh snow peas
1 cup carrots, shredded
1/2 cup green onions, sliced
3 tbsp. cilantro, snipped
1/4 cup peanuts, dry roasted
Dressing:
1/4 cup canola oil
3 tbsp. rice vinegar
1 tbsp. soy sauce
1 tsp. gingerroot, grated
5 drops hot pepper sauce

- Cook pasta according to package directions. Drain well.
- Whisk dressing ingredients in bowl until blended. In an attractive bowl, toss pasta,
dressing and remaining ingredients except peanuts. Serve warm, sprinkle with peanuts just before serving. It is delicious served cold. Serves 6.
